Mexican Corn Bread
Mexican Corn Bread is an moderately easy dinner. Made with 1 1/2 c. grated cheese, 1 1/2 lb. ground beef, 3/4 c. sliced jalapeño pepper or green pepper, 1 can whole kernel corn and 1 box corn bread mix, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix corn bread mix.
Drain corn and add to mixture.
Set aside. Brown ground beef and add salt and pepper to taste.
Pour 1/2 of corn bread mixture in casserole dish on top of mixture; add hamburger meat, cheese and peppers.
Pour remaining corn bread mixture on top.
Bake at 375° for 30 to 40 minutes.
