Mexican Corn Bread
Mexican Corn Bread is an moderately easy dinner. Made with 1 (8 oz.) creamed corn, 1 1/2 c. yellow corn meal, 1/2 tsp. salt, 1 1/2 c. grated longhorn cheese and 1 (4 oz.) can diced chilies, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix sour cream, corn, eggs and oil.
Add corn meal, baking powder and salt and stir in 1 cup of the cheese.
Add onion and chilies.
Mix well and put into a 9 x 12-inch pan.
Sprinkle with rest of cheese.
Bake at 400Β° for approximately 20 to 25 minutes.
