Mexican Chicken
Mexican Chicken is an easy dinner. Made with 4 oz. rice, uncooked (not minute rice), 2 c. water, 2 pkg. taco seasoning mix, 1 medium onion, chopped and 4 boneless chicken breasts, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In 2-quart casserole sprayed with Pam, place rice on bottom. Mix 1 package taco seasoning mix and water.
Pour over rice.
Layer onions, then chicken.
Sprinkle second package of taco mix on top. Microwave on High for 35 minutes in covered dish.
