Mexican Chicken
Mexican Chicken is an moderately easy dinner. Made with 4 whole chicken breasts, 1 c. chicken broth, 1 can cream of mushroom soup, 1 can cream of chicken soup and 1 (10 oz.) can ro-tel, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Boil chicken.
Bone; cut into bite size pieces.
Line 2-quart shallow greased casserole dish with slightly crushed Doritos.
Put chicken and chopped onion on top.
Mix rest of ingredients, except cheese.
Pour over chicken and Doritos.
Top with shredded cheese. Bake at 350Β° for 30 minutes.
