Mexican Beef Casserole
Mexican Beef Casserole is an moderately easy dinner. Made with 1 (12 pkg.) tortillas, 1 large green pepper, chopped, 3/4 c. celery, chopped, 1 lb. ground beef and 1/2 lb. cheddar cheese, grated, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Brown the meat, then add onion, celery and green peppers. Cook until vegetables are tender.
Cut tortillas into bite-size pieces and line the bottom of a pan with them.
Combine together soups, tomatoes, chili powder, garlic powder and add to meat mixture.
Pour half the mixture over the tortillas and sprinkle with half the grated cheese.
Repeat with a second layer.
Bake at 350Β° for 30 to 45 minutes.
