Mexicale Casserole
Mexicale Casserole is an easy dinner. Made with 1 lb. ground beef, 1 pkg. taco seasoning, 1 (14 1/2 oz.) can whole tomatoes, chopped (undrained), 1 (8 1/2 oz.) can whole kernel corn, drained and 1 (6 1/2 oz.) pkg. martha white mexican cornbread mix, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Preheat oven to 400Β°. Grease a shallow 2-quart baking dish; set aside. Brown ground beef in large skillet; drain.
Stir in seasoning mix, tomatoes and corn. Bring to a boil, stirring occasionally. Pour into prepared dish. Prepare cornbread batter according to package directions; pour over ground beef mixture. Bake 15 to 20 minutes. Let cool 10 minutes. Makes 4 to 6 servings.
