Meringue Cups
Meringue Cups is an moderately easy dinner. Made with 6 egg whites (at room temperature), 1/4 tsp. salt, 1 1/2 c. superfine sugar, 1 tsp. vanilla and 1 pt. fresh strawberries, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 200Β°.
Put egg whites and salt in bowl of mixer.
Beat until foamy.
Gradually add sugar until 1 1/4 cups have been added.
Beat until not grainy.
Fold in remaining 1/4 cup sugar and the vanilla into meringue.
Fill a pastry bag with mixture and pipe onto lightly greased cookie sheet.
Bake 1 hour until completely dry.
Remove from pan and put on rack to cool. Fill each cup with Lemon Curd and top with fresh strawberries.
