Melon Salad is an moderately easy dinner. Made with 6 tbsp. lime juice, 4 tbsp. balsamic vinegar, 6 tbsp. honey, choice of melon cut outs and mixed garden greens, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Whisk first 3 ingredients in small bowl.
Cut desired shapes from melons.
Just an hour before serving, gently fold melon into vinaigrette.
Refrigerate until needed.
Arrange greens on a plate. Place melon on greens and drizzle with additional vinaigrette, if desired.
Sprinkle with ribbon shavings of Parmesan cheese.
