Meaty Minestrone
Meaty Minestrone is an moderately easy dinner. Made with 1 1/2 lb. stew beef (1-inch pieces), 3/4 c. dry kidney beans, 7 c. water, 1 (16 oz.) can tomatoes and 1/2 cabbage, cut, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Wash kidney beans and place in Dutch oven.
Add water; bring to boil.
Cover and cook 2 minutes.
Remove from heat.
Let stand 1 hour.
Drain tomatoes; add liquid to beans.
Add meat, cabbage, carrot, onion, garlic, salt, pepper and basil to beans.
Cover and simmer 1 1/2 hours.
Cut reserved tomatoes into pieces.
Add tomatoes and macaroni to soup and simmer 15 minutes.
Serve with Parmesan cheese.
