Meaty Mexican Cornbread
Meaty Mexican Cornbread is an moderately easy dinner. Made with 1/2 lb. cheddar cheese, grated, 1 large onion, chopped, 1 or 2 jalapeño peppers, chopped, 1 lb. ground beef or sausage and 1 1/2 c. yellow cornmeal, this recipe delivers authentic, satisfying flavors. Brown meat with the onion.
Drain well.
Mix cornmeal, oil, milk, eggs, salt, soda and cream-style corn.
Pour half of cornmeal mixture into a 9 x 13-inch baking dish.
Add meat and onion mix, spreading evenly across dish.
Sprinkle cheese and jalapeños over meat.
Add remaining cornmeal mixture.
Bake at 375° for 45 minutes or until golden brown.
