Meatless Holuptsi is an easy dinner. Made with 2 c. rice (uncooked), 2 extra large potatoes, grated, 1 large onion, chopped and sauteed, 1 large head cabbage and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook rice until soft.

Add grated potatoes and onion to rice. Mix well.

Parboil cabbage head.

Let steam until soft enough to work with.

Cut out core and separate leaves.

Put rice mixture in cabbage leaf.

Roll up tucking in ends as you roll.

Place in shallow pot or Dutch oven.

Cover with any leftover leaves.

Add tomato sauce or tomato soup.

Cook on medium heat about 1 hour or more until cabbage is done.
