Meatless Borsch
Meatless Borsch is an moderately easy dinner. Made with 2 onions, sliced thin, 6 to 8 beets (cooked with skin on, then peeled, shredded and put aside), 3 carrots, shredded, 3 stalks celery, cut up and 1 small bag spices and clove of garlic, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Saute onions in some oil or margarine.
Add liquids and spices.
(One tablespoon spices, bay leaves and clove of garlic in cheesecloth bag.)
Add carrots and celery; let simmer until soft. Add some sour cream and dill; stir well.
When serving the borsch, add a dab of sour cream on top.
