Meatballs
Meatballs is an impressive dinner. Made with 1 lb. very lean ground beef (ground london broil is excellent and very low-fat), 1/4 c. skim milk, 2 slices bread, 1 egg white and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Soak bread in milk and combine with egg white.
Mix in ground beef, salt, thyme and onion.
Shape into 1 1/2-inch meatballs and bake for 30 minutes at 375Β°.
(You may cool and freeze meatballs for later use.)
Combine beef broth, water, ground pepper, yogurt and cornstarch in skillet.
Heat until thick.
Add meatballs and mushrooms, if desired.
Cook until meatballs are heated through. Serve over rice.
Serves 3.
