Meatball Shepherds Pie
Meatball Shepherds Pie is an moderately easy dinner. Made with 1 lb. ground beef, 1 egg, 2 c. bread or cracker crumbs, salt & pepper to taste and 3 tbsp. oleo, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
π¨βπ³ Instructions
Mix first 4 ingredients, shape into meatballs, brown.
Remove and brown onions in drippings, blend in flour and undrained mushrooms.
Add meatballs, tomatoes, bring to a boil.
Simmer 30 minutes.
Add peas and carrots, add oregano, season to taste.
Put in shallow baking dish, spread potatoes on top.
Brown under broiler.
