Matterhorn Chicken
Matterhorn Chicken is an moderately easy dinner. Made with 4 chicken breasts, 2 c. shredded swiss cheese, 3/4 c. dry bread crumbs, 4 tsp. green onion, chopped and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Split, bone and skin chicken breasts.
Flatten chicken breasts to 1/4 inch thick.
Sprinkle each piece with salt.
Top with 1/2 teaspoon of onion and 1/4 cup of cheese.
Fold chicken over cheese.
Secure with toothpicks.
Dip chicken in eggs; coat with bread crumbs.
Brown in oil.
Place chicken in baking dish.
Bake at 400Β° for 20 minutes.
Serve over noodles.
