Mashed Red Skinned Potatoes
Mashed Red Skinned Potatoes is an easy dinner. Made with 2 lb. unpeeled red skinned potatoes, cut into 1-inch chunks, 1/4 c. low-fat milk, 1/2 tsp. fresh ground pepper, 3 tbsp. finely chopped italian parsley and 1 tbsp. unsalted butter or olive oil, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Place potatoes in a medium saucepan with water to cover. Bring to boil over high heat.
Lower heat to a simmer and cook until potatoes are cooked through, about 10 minutes.
Drain, reserving 1/4 cup of the cooking water.
Place the pot over low heat.
Using a potato masher, roughly mash, adding the reserved water, milk, pepper, parsley and butter or oil.
