Marshmallows
Marshmallows is an moderately easy dinner. Made with 2 c. granulated sugar, 3 envelopes unflavored gelatin, 1/8 tsp. salt, 1 c. water and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In medium saucepan combine granulated sugar, gelatin and salt. Stir in water; heat until sugar is dissolved, then bring just to boiling.
Remove from heat; cool slightly, about 5 minutes.
Stir in vanilla.
Transfer to large mixer bowl.
Beat at high speed of electric mixer about 10 minutes or until mixture resembles thick marshmallow cream.
Pour into buttered 13 x 9 x 2-inch pan. Cool.
With kitchen shears dipped in hot water, cut in 1 1/4-inch squares.
Roll in powdered sugar.
Makes about 6 dozen pieces.
