Marshmallow Cherry Bars
Marshmallow Cherry Bars is an moderately easy dinner. Made with 3/4 c. margarine, 1/3 c. brown sugar, 1 1/2 c. flour, 2 envelopes unflavored gelatin and 1/2 c. cold water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine margarine, brown sugar and flour and press in ungreased pan.
Bake in 325Β° oven for 30 minutes; cool.
Soften gelatin in water.
Combine white sugar and juice drained from cherries and water to make 1/2 cup.
Bring to a boil and boil for 2 minutes.
Remove and stir in softened gelatin.
Beat at medium speed until very stiff, about 20 minutes.
(Mixture climbs beaters as it thickens.)
Fold in cherries, nuts, food coloring and almond extract.
Spread on top of baked crust.
Let stand at room temperature until it sets.
