Marinated Vegetables
Marinated Vegetables is an moderately easy dinner. Made with 1 1/2 c. salad oil, 2/3 c. vinegar, 2 1/2 tsp. salt, 1 tsp. pepper and 2 or 3 garlic cloves (crushed), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix marinade ingredients well.
Cut cauliflower, carrots and celery into bite-size pieces.
Combine all ingredients in large container (at least 3 qt.).
Refrigerate and marinate 24 hrs. tossing frequently.
You could also add whole button mushrooms.
