Marinated Vegetable Snack
Marinated Vegetable Snack is an moderately easy dinner. Made with 2 carrots, cut into sticks, 1 c. broccoli buds, 1 c. cauliflowerets, 1 medium cucumber, sliced and 1 medium zucchini, cut into sticks, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Advance preparation
In saucepan, simmer carrots, covered, in small amount of water for 2 minutes.
Add broccoli and cauliflower; bring to boiling.
Reduce heat; simmer 3 minutes more.
Drain.
Combine all vegetables.
Combine cooking oil, vinegar, oregano, salt and pepper; pour over vegetables.
Cover. Chill at least 8 hours; stir occasionally.
Makes 4 cups.
