Marinated Shrimp
Marinated Shrimp is an moderately easy dinner. Made with 2 lb. shrimp, cooked and peeled, 2 medium onions, sliced, 2 small green peppers, sliced, 4 carrots, sliced and cooked and 10 3/4 oz. can tomato soup, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine shrimp, carrots, onions and peppers; set aside.
Mix well soup, vinegar, salad oil, sugar and mustard.
Pour over shrimp and vegetables.
Mix lightly.
Refrigerate overnight. Before serving, add cucumber slices.
(You can also add orange or apple slices, dew melon cubes, etc.).
Serves 6.
