Marinated Peppers
Marinated Peppers is an moderately easy dinner. Made with 4 whole green or red peppers, 1/2 c. olive oil, 1/4 c. tarragon vinegar, 2 tbsp. capers and 1 clove garlic, crushed, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Place the whole peppers in shallow pan, 4-inches from heat. Broil 12 to 15 minutes, turning to broil all sides.
Cool, cut in half, peel off thin skin and remove seeds and hard pulp.
Cut peppers lengthwise into 1/4-inch strips and place in bowl. Combine all other ingredients in jar and shake.
Pour over peppers. Serve at room temperature.
