Marinated Mushrooms
Marinated Mushrooms is an moderately easy dinner. Made with 1/3 c. red wine vinegar, 1/3 c. salad oil, 1 red onion, sliced thin, 1 tsp. salt and 2 tsp. dried parsley flakes, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Simmer all ingredients, except mushrooms for 5 minutes.
Drain mushrooms and add to marinade.
Store in refrigerator at least 24 hours and as long as 2 weeks.
Remove from refrigerator at least one hour before serving.
Serve in bowl with toothpicks.
