Marinated Mushrooms
Marinated Mushrooms is an moderately easy dinner. Made with 2 lb. small mushrooms, 1/2 c. red wine vinegar, 1/3 c. water, 2 tbsp. canola or corn oil and 1 tsp. sugar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Clean the mushrooms, cutting the ends of the stems off.
Set aside.
Place remaining ingredients except bell pepper in a large saucepan and bring to a boil.
Add the mushrooms and bell pepper. Bring to a boil again. Reduce the heat and simmer, uncovered, for 5 to 10 minutes or until the mushrooms are tender. Cool to room temperature.
Refrigerate in covered container for several hours before serving.
