Marinated Carrots
Marinated Carrots is an moderately easy dinner. Made with 1 bunch carrots, 1/2 c. onion slices, 1/2 c. bell pepper, diced, 1/4 c. vinegar and 1/4 c. oil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook carrots until almost done.
Mix vinegar, oil, sugar and soup together.
Add onion and bell pepper to carrots while the carrots are still warm.
Add vinegar mixture. Leave set for 3 or 4 hours before eating.
Can be eaten days later if kept in fridge.
