Marinated Carrots
Marinated Carrots is an moderately easy dinner. Made with 2 lb. carrots, sliced, 1 medium onion, sliced, 1/2 green bell pepper, chopped, 1 can condensed tomato soup and 1/2 c. vinegar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook carrots in small amount of water until tender; drain. Combine carrots, onion and pepper; set aside.
Combine soup, vinegar, oil, sugar and mustard; stir until well mixed.
Pour over vegetables; toss lightly.
Refrigerate at least overnight.
