Marinated Carrots
Marinated Carrots is an moderately easy dinner. Made with 2 lb. fresh carrots, 1 onion, sliced thin, 1/2 bell pepper, chopped, 1 can tomato soup and 1/2 c. cooking oil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Slice carrots in rounds and boil in salted water for 10 minutes or until tender; drain.
Put soup, oil, vinegar and sugar in saucepan and bring to a boil.
Layer carrots, onions and peppers in baking dish.
Pour hot soup mixture over them.
Cool and refrigerate.
