Marinated Carrots
Marinated Carrots is an moderately easy dinner. Made with 5 c. carrot sticks (about 2 lb.), 1 medium onion, sliced, 2 bell peppers, sliced, 1 can tomato bisque soup and 3/4 c. vinegar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook carrots slightly, allowing to boil 3 to 5 minutes.
Drain at once.
Place cooked carrots, raw onions and peppers in layers. Cover with marinade.
Prepare at least 12 hours in advance.
Will keep in covered container in refrigerator for 2 weeks.
