Marinated Carrots is an moderately easy dinner. Made with 5 c. sliced carrots, 1 medium sweet onion, 1 small green pepper, 1 (10 oz.) can tomato soup and 1/2 c. salad oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook carrots.
Drain and cool.
Cut onion and green pepper in round slices and mix with cooled carrots.
Combine remaining ingredients and pour over vegetables.
Cover and marinate 12 hours or more.
