Marinated Carrots
Marinated Carrots is an moderately easy dinner. Made with 2 lb. carrots, sliced, 1 medium onion, sliced, 1/2 green pepper, sliced, 1 (10 3/4 oz.) can tomato soup and 1/2 c. vinegar, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook carrots until tender in small amount of boiling, salted water.
Drain.
Combine with onion and green pepper.
Combine soup, vinegar, salad oil, sugar and mustard.
Stir until well mixed.
Pour over vegetables.
Toss lightly with a fork. Refrigerate overnight.
Makes 8 servings.
