Marinated Carrots is an moderately easy dinner. Made with 2 lb. carrots, pared and sliced into 1-inch lengths (about 5 c.), 1 tsp. salt, 1/4 tsp. pepper, 1 tsp. prepared mustard and 1/2 c. salad oil, this recipe delivers authentic, satisfying flavors. Bring carrots with water to cover to a boil for 5 minutes. Drain and cool.

In a medium bowl, add salt, pepper and mustard. Beat in a little of the oil to blend with mustard.

Add balance of oil, sugar, vinegar and soup. Beat to blend.

Stir in onion and green pepper.

Cover tightly and chill overnight.

Makes 12 to 16 servings.
