Marinated Carrots
Marinated Carrots is an moderately easy dinner. Made with 2 lb. carrots, 1 onion, sliced, 1 green pepper, sliced, 1/2 c. salad oil and 1/2 c. vinegar, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Peel and cut carrots in fairly thick slices.
Boil until tender.
Put half of carrots in large bowl.
Cover with onion and pepper slices.
Add remaining carrots.
Do not stir.
Combine remaining ingredients for dressing, mixing well.
Pour over carrots.
Let stand overnight.
Stir before serving.
Keeps indefinitely in refrigerator.
