Marinated Carrots is an moderately easy dinner. Made with 2 lb. cooked and chunked carrots, 1 green pepper, chopped, 1 small onion, chopped, 1 can tomato soup and 3/4 c. vinegar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Peel and slice carrots.
Cook in salt water just until tender. Drain.
Add pepper and onion.
Mix soup, vinegar, oil, mustard, sugar, salt and pepper. Pour over warm carrots. Refrigerate and marinate overnight or longer.
