Marinated Carrots
Marinated Carrots is an moderately easy dinner. Made with 2 lb. carrots, sliced, 1 medium onion, sliced, 1/2 green pepper, sliced, 1 (10 3/4 oz.) can condensed tomato soup, undiluted and 1/2 c. vinegar, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cook carrots in boiling water until tender.
Drain.
Combine carrots, onion and pepper.
Set aside.
Combine soup, vinegar, oil, mustard and sugar.
Stir well.
Pour over vegetables.
Toss lightly.
Refrigerate overnight.
Will keep up to 2 weeks in refrigerator.
