Marinated Carrots is an moderately easy dinner. Made with 5 c. fresh carrots, sliced, boiled until tender and drained, 1 onion, 1 green pepper, 1/2 c. oil and 3/4 c. vinegar, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Place carrots in Pyrex dish.
Slice the onion and green pepper.
Put on top of carrots.
Mix together remaining ingredients and bring to a boil.
Pour this over carrots, onion and bell peppers.
Chill overnight before serving.
