Marinated Carrots
Marinated Carrots is an moderately easy dinner. Made with 2 lb. fresh carrots or 2 cans (16 oz.) carrots, 1 green bell pepper, 1 medium onion, 1 can cream of tomato soup and 3/4 c. vinegar, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Clean carrots with vegetable brush; slice the fresh carrots (not too large).
Steam fresh carrots or drain canned carrots. Slice green bell pepper and onion into rings.
Combine with cooked carrots.
Combine all other ingredients and pour over vegetables. Let stand in refrigerator overnight.
This keeps very well.
