Maque Choux
Maque Choux is an moderately easy dinner. Made with 1 onion, chopped, 1/4 c. olive oil, 2 tbsp. butter, 10 ears fresh corn (kernels cut from cob) and 4 fresh tomatoes, peeled, seeded and diced, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Saute onion for a few minutes in olive oil and butter, then add bell pepper.
A couple of minutes later, add corn, stirring all the while.
This mixture should just be about done, then add diced tomatoes.
Cook about 2 more minutes, then season with salt, pepper and sugar.
Makes 6 servings.
