Mango Salad
Mango Salad is an moderately easy dinner. Made with 3 (3 oz.) pkg. lemon jell-o, 1 (29 oz.) can mango, drained (save liquid), 3 c. boiling liquid (mango liquid plus enough water to make 3 c.), 1 (8 oz.) pkg. cream cheese and juice of 1 lime (optional), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Dissolve Jell-O in boiling liquid. Combine mangos and cream cheese in blender and blend until creamy. Add to Jell-O and stir in lime juice and rind.
Pour into a greased mold and chill overnight. Unmold and serve on bed of shredded lettuce. Garnish with kiwi and/or strawberries. Makes a very pretty dish for luncheon.
