Mali Veggie Rice
Mali Veggie Rice is an moderately easy dinner. Made with 1 c. long grain rice, 1 tomato, 1 c. mushrooms, 1 green pepper and 1 small onion, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook the rice.
Wash the tomato, mushrooms and green pepper. Cut the mushrooms in half and mince the green pepper. Peel and slice the onion.
Melt the butter in the skillet and saute the onion until soft.
Add the other vegetables, tomato paste, salt, cayenne and curry powder.
Cook for 15 minutes, stirring.
Stir in the cooked rice and serve.
