Make Ahead Guacamole is an moderately easy dinner. Made with 1 envelope gelatin, 1/4 c. cold water, 1/2 c. boiling water, 1 tbsp. lemon juice and 1 1/2 c. mashed ripe avocado, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Sprinkle gelatin over cold water and let stand 5 minutes.
Add 1/2 cup boiling water and stir until dissolved.
Whisk in lemon juice, mashed avocado, mayonnaise and salt.
Stir in minced onion and tomato.
Turn into 3 cup mold or bowl. Make in a.m. and serve in p.m. and it will not darken.
