Mad Cioppino
Mad Cioppino is an impressive dinner. Made with 2 tbsp. olive oil, 1 large onion, diced, 1 large green pepper, diced, 12 + fresh garlic, minced and 3 (28 oz.) cans tomatoes, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In large pot (medium heat) in olive oil, cook onion, green pepper and garlic until tender (5 minutes).
Add tomatoes, wine, parsley, salt, basil, pepper and bay leaf.
Heat to boiling. Reduce to low; cover and simmer 15 minutes.
Increase to medium heat.
Add clams; cook 10 minutes (stirring occasionally).
Add crab, shrimp, scallops and fish.
Cook 5 minutes or until shrimp turn pink and scallop loses transparency.
Serve with hot French bread.
