Lye Hominy
Lye Hominy is an easy dinner. Made with 1 scant tsp. lye (caustic potash), 1 gal. water and 2 qt. dry shelled large kernel corn (white or yellow), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Place scant teaspoon of lye into iron kettle (never use aluminum).
Cautiously add 1 gallon of water.
When lye comes into contact with water, it boils up and produces a solution caustic enough to cause dangerous burns to skin and flesh.
Add corn. Stir; let stand overnight.
Use only an enamelware or stainless steel spoon.
