Luscious Lemon Pie is an moderately easy dinner. Made with 1 c. sugar, 1 tbsp. grated lemon rind, 1/4 c. lemon juice, 3 egg yolks, slightly beaten and 1 (9-inch) baked pie shell, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine sugar, cornstarch, 1 tablespoon lemon rind, butter, lemon juice and egg yolks in a heavy saucepan.
Cook over medium heat until smooth and thickened, stirring constantly.
Cover and cool.
Pour sour cream into filling and pour into pie shell. Chill 2 hours before serving.
Top with whipped cream; garnish with lemon rind, if desired.
