Low-Fat Mini Eclairs
Low-Fat Mini Eclairs is an easy dinner. Made with 8 ladyfingers, 1 pkg. sugar free vanilla pudding (use half), 1 pkg. sugar free chocolate pudding (use half), 1 c. skim milk and 4 tbsp. cool whip lite, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Prepare pudding mixes in a separate container, using skim milk instead of water.
Split ladyfingers in half crosswise; spread each bottom half with 1 tablespoons vanilla pudding.
Cover with top half of ladyfinger to make an eclair.
Spread 1 tablespoon chocolate pudding on top of each "eclair".
Drop 1 teaspoon Cool Whip lite in center of eclair.
Chill.
Serves 4 (2 per person).
