Low Fat Eclair Desert is an easy dinner. Made with 24 whole graham crackers, 1 large box instant vanilla pudding mix, 1 c. lite cool whip and 1/2 can lite chocolate frosting, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Make pudding with skim milk according to package directions.
Fold in cool whip.
In 13x9 pan layer 8 whole graham crackers; top with one half the pudding mixture.
Layer 8 more crackers and remaining pudding.
Layer with last crackers on top.
Thin frosting with a little milk and spread on top.
Chill at least 4 hours.
