Lime Pickles
Lime Pickles is an moderately easy dinner. Made with 7 lb. cucumbers, sliced to 1/4 in., 2 c. lime, 4 1/3 lb. sugar, 2 quarts vinegar and 2 tbsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Place cucumbers in 2 gallons water and lime.
Let set for 24 hours. Drain and rinse off cover.
Cover with cold water and let stand 3 hours.
Cover with vinegar and spices and let stand over night.
Heat cucumbers, vinegar and spices to boiling.
Simmer for 35 minutes.
Place in clean jars and seal.
