Lime Pickles
Lime Pickles is an moderately easy dinner. Made with 7 lb. cucumbers, chunked, 1 gal. water, 1 c. pickling lime, 1 qt. vinegar and 1 qt. water, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Soak the first 3 ingredients for 24 hours.
Drain and rinse well, then cover with clear water for 1 hour.
Drain.
Mix remaining ingredients together.
Pour mixture over chunked cucumbers and bring to a boil.
Add a little green food coloring for looks.
Reduce heat and simmer for 30 minutes.
Remove from heat and pack in sterilized jars and seal.
