Lime Pickles
Lime Pickles is an moderately easy dinner. Made with 1 1/2 gal. cucumbers, cut round, 2 gal. water or enough to cover the cucumbers, 2 c. lime, mixed in water, 8 c. vinegar and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Pour the lime and water mixture over the cucumbers and leave 24 hours. Wash in cold water.
Leave for 3 more hours.
Combine the vinegar, salt, sugar and pickling spice.
Pour over cucumbers and cook 30 minutes, then can.
