Lima-Corn Bake
Lima-Corn Bake is an moderately easy dinner. Made with 1 (10 oz.) pkg. frozen lima beans, thawed, or fresh, 1 (10 oz.) pkg. frozen corn niblets, thawed, or fresh, 2 small tomatoes, thin sliced, 1 small onion, thin sliced and 1 clove garlic, crushed (more if you like), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Place 1/2 the lima beans in bottom of nonstick baking pan. Top with a layer of corn, then top the corn with 1/2 of the tomato slices, the onion and garlic.
Top with another layer of lima beans and corn; end with tomato slices.
Pour tomato juice over all.
Cover and bake at 350Β° for 40 minutes.
Serves 4 to 6.
