Lentil Soup is an moderately easy dinner. Made with 1 c. lentils, 1 qt. water, 2 tsp. salt, 1/2 c. finely chopped onion and 1 c. diced carrot, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Wash lentils.
Add water, salt, onion, carrot, celery, bay leaf and thyme.
Cook slowly for about 45 minutes.
Add tomatoes, butter and meat and heat well.
(Tomatoes may be cooked with lentils, etc. if preferred.)

6 to 8 (1 cup) servings.
